“咖啡”(Coffee)一词源自埃塞俄比亚的一个名叫卡法（kaffa）的小镇，在希腊语中“Kaweh”的意思是“力量与热情”。茶叶与咖啡、可可并称为世界三大饮料。咖啡树是属茜草科常绿小乔木，日常饮用的咖啡是用咖啡豆配合各种不同的烹煮器具制作出来的，而咖啡豆就是指咖啡树果实内之果仁，再用适当的烘焙方法烘焙而成。

咖啡的营养价值
1.咖啡的主要成分是咖啡因、脂肪、蛋白质、碳水化合物、无机盐和维生素等。
2.果实成熟后除去果皮除去果皮及大部分种皮所得的种子称生咖啡或咖啡豆。生咖啡经焙炒后研细得咖啡粉，即可制作饮料。咖啡味苦，具特异香味，含咖啡醇和1.3%的咖啡因生物碱，为麻醉、利尿、兴奋和强心药物。

咖啡的食用效果
1.提神
咖啡中含有咖啡因，有刺激中枢神经、促进肝糖原分解、升高商^糖的功能。适量饮用可使人暂时精力旺盛、思维敏捷。
2.抗辐射
咖啡有强心和提高人体基础代谢的作用，可以缓解脑血管痉挛和气管平滑肌的痉挛。适量饮用咖啡可减轻光波、电磁波等带来的辐射伤害。

咖啡的食用禁忌
1.患有冠心病、胃病、消化道溃疡等病症忌食。
2.孕妇、失眠者或临睡觉之前不宜饮用。
3.咖啡中的单宁酸，会让钙吸收降低。所以，喝咖啡的时间，最好是选在两餐当中。
4.饮咖啡不宜过量。
5.经常喝咖啡的人应注意补钙。

伪劣咖啡是在真咖啡中掺入菊苣根粉，或将谷物、豆类焙炒粉碎后掺入。真咖啡含咖啡碱， 具有特殊香气。劣质咖啡一般是过期或密封不严受潮造成结块，香气滋味明显变化，往往香 气消失，喝有异味。还有将咖啡粉磨细冒充速溶咖啡的，其实，二者工艺不同，速溶咖啡是 将咖啡水浓缩，喷雾干燥而成，工艺复杂，冲泡后立即溶解，无漂浮，无渣滓，而咖啡粉尽 管磨得很细，冲泡后有漂浮物，有沉渣，不能下咽，只能吹着喝。常见还有将速溶咖啡包装 涂改保质期的。速溶咖啡保质期一般为二年。
